I am looking to buy a knife, probably 8" blade, and would like some input. I have used some Wustof and Zwilling Henckel knives, but they have so many levels/grades and it seems to me that many of the ones regularly available are the economy versions. Does anyone here have any experience with their higher end models?
What about the Japanese knives? I am intrigued by the damascus forged styles, but what are the advantages to that style of forging?
I know there is lots of info on the net, but it is my Mother's 60th on the weekend and I am in court all week, so it is kind of a last minute thing.
