Here's a cool little dish I came up with for supper tonight. It's a Taco Pie.
You will need :
- Two boxes of tenderflake frozen pie crusts (2 per box).
- Package or taco seasoning (low sodium is recommended).
- Small pouch of Kraft shredded Tex Mex Cheese.
- 1 large onion.
- 3 cloves garlic.
- 1kg of ground meat, any kind will work. I chose pork as it was prices incorrectly and I got it for a song.
- Small red onion.
- Taco sauce.
- Sour cream.
- Fresh cilantro.
- pickled jalapeno.
Over medium/high heat brown your ground meat. Drain VERY well. Toss in the taco seasoning and follow it's instructions. Once it's ready, toss it in large mixing bowl.
Over medium/high heat, 2 tbsps canola oil, cook garlic gloves and onion until translucent, throw a bit of salt in with it and some cumin. Put some chili powder in if you like. Hell, if you want to burn your arse, throw a bunch of it in with the meat too.
Mix that in with the meat... if you want to get fancy, throw some oregano in with it.
Deal with the pie crusts as per the box. Fill the pie shells with the taco mixture,
and cover with a liberal amount of shredded cheese. Put pie lid on, following instructions.
So you bake these two bad boys for about 10 mins at 450 preheated oven, then turn down to 350 and bake for 30 mins, open oven... put shredded cheese on top and some sliced pickled jalapenos, cook another 7 mins.
Put on plate, drizzle taco sauce over it, sour creme, some julien red onion, more jalapenos and fresh cilantro.
If you wanted to, you could put lettuce and freshly diced tomato on it... it would be pretty close to a taco pizza in that case.
Served mine with spanish rice. Everyone liked. Two pies feeds 5 adults and leaves seconds for two people lunch the following day.
