I've been trying to find out a bit more about what kinds of cheeses have low lactose levels or none at all. Most cheese made here in north america is artificially aged and a lot of the time contains milk powder which reintroduces lactose into hardened cheeses. My question is, where can I find more naturally produced cheeses that are lactose free?
I'm particularly interested in parmasean, something to put on sandwiches, pizza cheese, and real goat milk feta.
I know some of you 1%'ers probably splurge for the good shit, where is the source?
