I saw a video on youtube the other day about making a gourmet burger with brisket & steak (I think). This has inspired me to drive all over metro van (Princess auto in Coquitlam to Gourmet warehouse) looking for that perfect meat grinder today. I can't wait for the awesome 400watt meat grinder to be shipped to Blaine because I want that burger this weekend sometime. I can't find the vid on youtube anymore and I hoping you all-knowing-BCSCers' share your gourmet burger advice.
I am thinking grinding a ratio of quarter brisket, with the rest split between leaner steak & shank. I will be making the smaller snack/mini size burgers. What ratio do you use for burger meat and spices? Sauces for the burger (please, no Sum-Young-Guy sauce recipies, k!)? Any awesome recipes you like to share?
