What's your favorite old shop? You know the one, the staff didn't change every week. You could talk to the mechanics and see what they were doing when they worked on the bikes and all the rest.
For me it was BVW in Winnipeg. They taught me how to sync carbs and set valves on a boxer so when the rockers started rapping halfway though a trip you could fix it yourself and carry on.
Years later even though I wasn't on a Beemer I'd still go by to check in.
