Hey, I think a bike looks great with out, but I'd like to know what's going on behind me at an intersection instead of being the meat in a car sandwithch.

So two pages later, the answer to the original question is:

1. You can physically remove your mirrors if you have the tools.
2. The law says you need at least one to ride legally on the street.

It's unclear whether a Reevu helmet would qualify or not.

I removed the stock mirrors on my Trumpy and replaced them with the CRG Hindsight LS adjustable bar end mirrors.

They look awesome, cleaned up my front fairing and I can now actually see the road and traffic behind me instead of my fucking shoulders...

I lost the screws for one mirror and its the most annoying thing not having a mirror on one side I cant imagine what it would be like without both...
