Hey..

quick noob question - I need both wheels off the ground to take the rims off

If I have a center stand that came with the bike, can I use center stand + front stand?

or do i need to use front + rear stand (balancing issues)?

thanks!

Center and front stand is just fine. Works great.

Safety hint. Use a tie down from the center stand to something up forward so it doesn't try to fold by accident if you push the bike the wrong way.

The centerstand doesn't have quite as wide a footprint as a rear stand but as long as you're not pulling on the bike like a gorilla it'll sit there just fine.
