I know most bike shops offer this service.. BK, Carter, RMS.....

Friend had his 929 winterized at Carter for about $350. The storage deal included a service for the bike before taking it out for the spring/summer.

Probably not interested as I ride year round.

Question though: what liability does the storage operator take on? What happens if there's a fire and everything get's destroyed? Is it my responsibility to get insurance or is that included in the price?

A post-storage service option sounds like a good idea! :)

I think you'd have to get storage insurance for that sort of thing. I wouldn't really trust anyone else's insurance to cover MY bike. It's pretty cheap though, like $50 for three months or something like that.
