This all sounds like a basic tuning issue to me. The full exhaust does require a jet kit to make it work out but for a jet kit to work it needs to be tuned. It sounds like your kit was put in the first time with no follow up and now you're seeing the results.
But to clarify. You said you got the carbs cleaned and adjusted. What adjustment? Was it running OK before they did this work? Also when was this jet kit done and what did they put in and what brand jet kit is it? What's your current main jet size, needle position and pilot settings?
Basically the jet kit needs to be set up to deliver the goods. That requires some skill in evaluating what part of the rpm and carb range is in need of tuning. Without hearing more from you I'd GUESS (and that's all it is at this point) that your needle needs to be raised a notch to richen up the mid range-mid throttle mixture. But that may be just the tip of the iceberg. You really need to have a good tuner set the bike up to get the best out of it.
I'm not sure what shop you took it to but take your bike, the other parts of the jet kit, a wad of cash and some patience to a shop like Imperial, GPD or Burnaby Kawi and have them tune it up right. Typically setting up a jet kit takes 3 to 4 trips down under the tank to change settings. Each time this is done you're looking at about an hour and a half to do the mod, reassemble and test ride. Hence the big bill for labour.
